Tonight was simple. Steamed String beans & carrots & mushrooms
& sliced Sausage & left over cubed pineapple ham....very nice!!
Have to share a meal from a couple weekends back though. Got a
pork loin at a good deal. Tried something different instead of just
chopping it into thick steaks and BBQ'ing them.
We butterflied it. Stuffed & rolled it, and wrapped them (had to cut
it up 'cuz was too big) with 2kg's of bacon, and held it together with
scewers as the bacon made it too problematic to tie it up.
Seasoned with greek & souvlaki seasonings on the meat, Cornbread
stovetop stuffing, and in the big one I smeared out a layer (entire can)
of cranberries onto the meat before stuffing & rolling & bacon, etc...
Couldn't find my Girlfriends filleting knife (she fishes, I don't) so did this
all with a new clean utility knife out of my toolbox. Put it in the oven at
600F for ten minutes, then pulled it out and cooled the oven down to
300F and let it bake low & slow until we where happy with the internal
temperature.
Made darn sure the thermometer was in the meat & not the dressing.
Just drained the bacon grease off every 1/2 hour or so. Drained off 3/4
of a litre of grease that way.
It was 'flying without a net' baking, making it up as we went along, and
not that difficult at all. Impressive looking, and hard to go wrong taste
wise with 4&1/2 lbs of bacon for flavour. It was crazy good!!!
