Try (almost) the same meal but with polenta and cook the chicken in tomato sauce (diced tomatoes with onions and the usual spices)... Boil that down a bit and you're ready to go.

yesterday I made a wonderful pasta/whatever sauce. ground beef, ground pork, stewing beef, stewed tomatoes,
tomatoe paste, and tomatoe sauce, rosemary, wine, butter, Italian seasoning, simmered it for 5 hours.

instgead of pasta today, I sautéed some new potatoes, then spooned the sauce over them on the plate.
a nice glass of wine, dined outside at our picnic table, beautiful weather, all is good.

A real "spread" here- tossed salad, pork sausages, Swiss chard, yam.

Today, we had baked salmon with steamed asperguts and roasted tater nuggets.
Couple days ago I stuffed some chicken breast with cheeses and bacon and we ate that with broccoli and basmati.
