A certain amount of it has to do with "mind over matter". If a guy tells me he eats ball peen hammers and roofing nails and is healthy, I'm not going to argue with him. -:)

The long answer is too complicated. The readers digest version is much like petros said. Along with the super agressive yeasts we have today. Also you can thank Monsanto for much of the problem.

Cutting out bread requires exhibiting some control and thought over your diet. I suspect that has much more to do with the success of gluten free diets than anything else.

They aren't a success. It's a myth. proven over and over and over again. It's the fat and sugars in baked goods that make the impact.

It's not? How so?
Nah I'm not doing all your research for you. Last time we had this type of discussion you had me convinced that beef had zero antibiotics and other crap added to it via food etc until I researched it and low and behold... it did. I think you still denied it. :)

Bread does bad things to me so it really does not matter to me what kind of bad crap is in it. If you think that the bread today is exactly the same as what you ate as a child great. I would also say to you that the diet that you say is healthy for you may be great for your body but each of us needs to find what works best for us. There is no "one" best way for all.

When did grain drop in nutritional content? You're right. When I was a kid, bread had lard instead of canola and twice the sugar.

so you are saying bread today is healthier? Cool! I think you also support GMO because it is fine for us?

Very true. The public demands 'high rise' bread ( fluffy , soft) so more wheat gluten is extracted and added to it . Commercial yeast is chosen for a 'fast sugar feed', the mix is over sugared, the batch is fast risen.

P.S. did you know livestock that received anti-biotics can't be sold until a month after it has passed through the system?

wow, we were just speaking of this on Friday... yes... well water is best...I grew up in a community with very hard well water, Artesian wells if I remember correctly... came right out of the tap cold, clear and fresh... I miss it.

A paleo diet doesn't cut out fat. So, no, I don't think it's that simple.

some is, some isn't. I guarantee sprouted breads are healthier than what I grew up with.

paleo diet? I made no mention of that. I did however make mention that when you cut out bread, you are also cutting out a lot of fat and sugars.

Cutting out fat and sugars while drinking LOTS more water to properly digest proteins is how weight is lost.

You claimed it's why people who cut out bread lose weight... my sister's on a paleo gluten free diet. Low starch, high in proteins and veggies. She has not cut out fat by any stretch of the imagination. So, yeah, it's what immediately comes to mind as disproving your assertion.
