Mix it with Moose and it makes pretty good sausage. On its own, it's stringy and greasy. Tail makes some pretty good soup. Hint: spice is your friend here....
I predict an upsurge in the fur industry in the next few decades, I understand that the beaver had some utility at one time as various garments. Would that be the dead trees or the actual beavers or both. Could we run the beaver processing plant on beaver methane collected from the beavers early in the production process? What do they taste like?
