Actually cancer cells are normal cells that do not die or do not quit reproducing. The immune system is not a defense against that. It is a defense against foreign cells like flu virii or staphylococcus bacteria or varicella zoster virii.well I'm just a sawdust maker but for what it's worth, I think we all have the biological make up to have cancer cells grow. Maybe it just depends on how strong our immune system is. For some reason I'm thinking of native Americans not being able to fight off viruses brought over by the Europeans. Maybe there's a connection.

We cure stuff without nitrites and nitrates altogether.I'll stick to my free range pigs, ducks, chickens, geese, goats and rabbits, supplementing them with venison and moose when the occasion arises. Even when I do my own bacon and sausage, I can control the nitrates.
Cold-smoked salmon (pink preferably for me) is truly utopian. =)
