No it's not. When you boil the meat off the bones and hocks off of pork it's what is skimmed off the top or "head" of the pot. The cartilage isn't as dense as the water and rises to the top when it cools. What you are thinking is like saying the head on a beer is brains.

That's worse than I ever imagined. barf

It's incredible. It's garliced and spiced. It's really really good for you joints and it's low in fat. It's not just delicious, it's good for you.

I like mine with vinegar.

Oh so garlic is involved eh, that's sounding good. I have only seen it in a container so I guess I can't really balk until I've tried it.

All the bones except the spine.

Years ago my Dad did some mechanical work for a neighbour woman and at the she was a slaughtering a hog, but she didn't particularly need the head so the old man took the head home and made finest head cheese I've eaten in my life. Sorry I never got the recipe from him.

I learned to make head cheese, koubassa and a variet of smoked meats from my old who learned from his oldman and so forth.
