The three piece suit, be it board meetings or funerals, I can understand the fuction of the trousers, the pants and the vest but what function does the fukkin tie represent?

The necktie has military origins. The original leather neck wear could protect the neck in battle.

The stock predates the neckcloth (i.e. cravat, so it's not unreasonable that the stock led to the cravat which in its turn led to the modern necktie, with the scouts rationalizing its advantage as a potential arm sling.
