I'm wondering if there is a safe way to scan an important document and save it to file w/o running the risk of some A$$hole hacking into it?

Easy. Don't use the same computer for important stuff that you use on the net.

Make sure your computer and home network are secure. Make sure you run a LAN off a router. Don't use WiFi for your computer and make sure your home wifi for your wifi devices is secure and requires a password. You can also add more layers if you wish but that is the minimum.

The public library will let you scan paper to pdf at no charge

When it comes to computers I don't know sh*t!
