Java Ribs



4 Racks pork back ribs (about 6-8 lbs)


Sauce ingredients

2 tbsps instant coffee
1 cup catsup
1 cup beef stock
1 medium onion chopped
1/2 cup Packed brown sugar
2 tsp Each chili powder and paprika
1/2 tsp Each cinnamon and ginger
Two tablespoons instant cofee powder
2 tbsp Vegetable oil
Salt and pepper to taste

Trim fat off ribs and cut into serving sized pieces
Place ribs in large pot and cover wirh water and add 2 tblsp salt and simmer
over low heat for one and a half hours....drain

Combine all above sauce ingredients and brush over ribs and place, meat side up in shallow roasting pan...let stand for a couple hours

Bake ribs in 325 degree oven uncovered for about an hour...Baste twice with sauce.

Remove ribs to a platter and cool for ten minutes before serving.

Serves four

It is yummy...:smile:..This recipe has been evolving for the last twenty five years or so....works great on the barbeque as well. Used to do this three or four times in a summer when the kids were at home. I just happened to be cooking some ribs for dinner tonight.

The recipe calls for back ribs but well trimmed side ribs work just as well.

mmmmmmmmmm .... drooling here ... sounds like dinner tonight! One question, though ... is it 2 tbs or 4 tbs of instant coffee??

I've used as many as four but two is enough. That was a typo. :smile: Four won't hurt.

how strong is the taste of coffee?

Just strong enough to make you wonder what that taste is. Most people will say things like "what is that neat flavour? This is my favourite rib recipe.

What is coffee powder? And what kind of instant coffee or does it matter?

Almost any kind of instant coffee will do. I've used everything from Nabob to Nescafe and it doesn't seem to make a lot of difference.
