I'll just cut or copy and paste.
If you click "reply" and highlight the text you want to quote, then hit the icon in the top bar that looks like a page with writing on it (if you cursor over it, a pop-up will say "Wrap quote tags around selected text," that'll do it.
Another way is to just type [q-u-o-t-e], then paste in the text you want to quote, then type [/q-u-o-t-e]
