    One of the restaurants on Gabriola Island served something like this a few years back when we lived on that island. I liked it.     The hard smoked country hams are the most salty. They are meant to last through a year with no refrigeration so there is a lot of salt there. But hey, we like what we like...Nobody can complain about that....;-)
