Maple syrup is the best but I can only take it in small doses, it's far, far too sweet. But I agree on the maple flavoured yuck, blah! Lol.

I recently learned that the maple syrup Consummers buy is actually meant to be super sweet. Grade A Maple syrup was used as a sugar replacement during WWII due to rationings and was created to have less maple flavour so it could be used as a replacement for cane sugar.

Grade B is the full of maple flavour, less sweet variety that will make your mouth water.

American pancake and waffle lovers who consume large quantities of syrup containing caramel colour may be putting themselves at a higher risk of developing cancer, a new report reveals.
Caramel colour is often used to give imitation maple syrups in the U.S. their amber hue common in more expensive pure maple syrups.
Consumer Reports, an American magazine published by the Consumers Union, says that some types of caramel colour contain 4-MeI, a potential carcinogen.

When plan to order pancakes in a restaurant I also ask if they have real maple syrup, the imitation in blaaaaa.
Yah well. about 10 years back they were really trashing Bacon as a sure Cancer causing agent. Then about 2 years ago Bacon became the most sought after food in North America. There are recipes for Bacon Muffins, Bacon Chocolate Chip Cookies, Bacon Cupcakes. Denny's Restaurants even had a Maple and Bacon Milkshake on the menu.

So is it the Maple Sugar marketing Board behind this?

When I go camping, I make sure to have a can beans for the morning breakfast. With eggs and bacon it's almost gourmet.

Pretty well ALL food is good...............................................in moderation. A couple of rashers of bacon every two weeks isn't going to give you cancer, a pound at every meal might!

You bet!

We've surpassed all that. Now we have the Bacon Bowl.

Lol.

You know what I love about you? Besides the flannel I mean. I used to be convinced that I was the only one who would ever look at the mention of pancakes and maple syrup in a thread and immediately think of SCTV. :D

My little bro before he lost 100lb was the spitting image of John Candy. Every Halloween he dressed up as Dr Tongue and every time he'd win the $100 bar tab and we'd get so bloody juiced and hit Smitty's after the bar. I'm the same way, I can't look at a plate of pancakes without an ear to ear grin.

Maple syrup is one of the much-anticipated harbingers of spring. Favourite ways of celebrating this gift of nature, include drizzling over pancakes and waffles and incorporating it into delicious dessert recipes.

It’s the latter that I’m featuring today. The following recipe I have enjoyed for more than 40 years. The original recipe incorporated walnuts with the maple, but pecans are a terrific option. This rich pie is a must when the maple syrup season is in full swing. The recipe can easily be adapted to make tarts, too.

Maple Pecan Pie

Serves 8

  • 1- 9-in. baked pie shell
  • 1 can sweetened condensed milk
  • 1 c. (250 ml) maple syrup
  • 1 envelope unflavoured gelatin
  • 1/4 c. (50 ml) water with pinch of salt
  • 1 c. (250 ml) pecans, finely chopped
  • 1-1/3 c. (325 ml) whipping cream (35%)

1. In a double boiler, combine the sweetened condensed milk and maple syrup and cook over low heat until thick. Remove from heat.

2. In a small saucepan, soften gelatin in water. Stir over low heat until dissolved.

3. Add gelatin and 3/4 c. nuts to condensed milk-syrup mixture. Chill for 30 to 40 minutes or until mixture begins to thicken.

4. Whip cream until stiff. Reserve 1 c. (250 ml) for decorating.

5. With a spatula, gently fold remaining whipped cream into syrup mixture. Pour into shell. Chill 2 to 3 hours.

5. Decorate with remaining whipped cream and remaining pecans.
