Pancakes for breakfast....or whatever

Now there is familiar ground.:smile: My daughter, when she was 8 or 10 years old, used to bring two or three of her friends home on a weekend for a sleep-over. I'm not sure when it was that they actually slept. Seems to me they were giggling and chattering the whole night.

For breakfast it was pancakes or waffles. At that time we had a fairly large stainless steel frying pan in which I could cook two medium or four small pancakes. Those four little girls would happily keep me busy making pancakes for at least an hour and a half.

In recent years my kids bought me a non-stick electric griddle that will turn out six good sized pancakes at one time.

My kids are grown up and married now, with children of their own, but once in a while we still see the pancake gang and occasionally, they get me to make pancakes again. Much easier with the griddle.:smile:

Our girls think I make then best ever. I make one pancake at a time. They are about 10" in diameter and about an inch thick. And I, like Dex, add the vanilla last, and to make them really fluffy, I put a lid over them. Not a complete seal as I think the moisture would make them soggy. Never thought of adding anything except whatever fruit people want in them. I'll try cinnamon. Thanks, Dex.

My general recipe is all approximate amounts:
3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
salt
3 cups fresh buttermilk
1/2 cup Pacific evaporated milk
3 eggs medium-sized
1/3 cup butter, melted
squirt of vanilla (the real stuff)
sliced (unless it's blueberries) fruit of your choice
Anna uses pretty much the same recipe, I think. Those are good too, but you need more of them to get full.

"Creeps" are awesome, too.

1 1/2 cups milk (raw milk is best)
3 egg yolks
1 1/2 cups all-purpose flour
2 tablespoons sugar
salt (I use pinches, I don't know how much cuz I have big fat fingers.)
5 tablespoons melted butter
Vanilla squirt (the real stuff)

Corn Meal Pancakes
I find these pancakes a bit nicer when pancakes are most of the meal. The cornmeal adds a little body. These are great with sausages or bacon.

Ingredients:


  • 1/2 cup cornmeal
  • 1 1/2 cups cold water
  • 1 1/4 cups buttermilk
  • 2 cups sifted all purpose flour
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 2 eggs, beaten
  • 2 tablespoons soft butter
Preparation:

Put cornmeal and cold water in a saucepan; bring to a boil, reduce heat, and continue to boil gently for 5 minutes. Remove from heat and cool a bit. Turn into bowl; stir buttermilk into cornmeal mixture. Sift together flour, sugar, salt, baking powder and baking soda; add to cornmeal mixture. Stir in beaten egg and butter. Cook pancakes on fairly hot griddle.

and, he refers to everything in the kitchen, as 'yours', where do you keep your
'whatever'. Very typical italian boy, with 2 brothers, who's mother did everything
for them, and I continued that trait, because it was a little more common back
then, although,' when my dad was sober', he was a good cook, worked in the
logging camps, up north.

I think the secret is liking to cook. If you enjoy cooking you will improve over the years. I ruined a lot of good food in the old days and my wife was patient enough to give me room because she knew I liked to cook. I lived with three other bachelors before I got married and I usually did the cooking so had a few ideas. Eventually I learned what worked and what didn't. I didn't/don't aspire to be any Julia Child, or Emeral(sp) but I can cook most things pretty well.

My husband can be a great cook. Like yours though - he refers to everything in the kitchen (in fact in pretty much the whole house) as "yours". The fridge seems to be "mine" along with things like the floor and the stove and washer/dryer. Except - the TV!!! It seems to belong to him. We have two remote controls and his seems to be the green one!! lol He also loves "Panks" and he loves them with vanilla in them too. We don't have them too often since the kids left home. I don't like them.

Jeez, how could I have missed this thread the first time around? I make, according to my daughter and her friends, the best pancakes in the world. It's probably not true, but hey, I'll take the accolade, and it's part of some of my favourite memories of her. Sunday morning, after a sleepover where nobody got any sleep, three or four little girls around the kitchen table, I'm making my famous "Daddy pancakes," and the girls are scarfing them down with butter and maple syrup and exclaiming over how great they are. Doesn't get any better than that.

I regret that I can't offer a recipe though. They're different every time, I just throw together what seem to be appropriate amounts of flour, milk, baking soda, sugar, vanilla extract, melted butter, and cinnamon, and whomp the mixture up 'til it looks right. Never had a failure, but never quite had a duplicate either. The only trick is to put the vanilla extract in last, after the baking soda has done its work, if you put it in too soon they won't rise.
I'm not so sure it's the vanilla you need worry about. When we make our fish & chip batter we let the BP rise the batter up so that it's pretty much flowing over the sides of the bowl. Then we beat it down so that it gives a thin batter on the fish rather then a fluffy un-cooked batter. So that leads me to believe it's all in how you treat your batter after you've added the baking powder.

He loves to fish, loves to tinker with the boat, mows the lawn, (since he retired), likes to golf, real good at having snoozes, enjoys most sports, as I
do, and loves to hunt, doesn't do that a lot, but a few times a season.
He isn't really 'connected' to the household duties at all, doesn't mind doing
outdoor stuff, but has to be shown what they are, usually, but he is getting
better at it, 'good for him', let's hear it for the italian, hip hip hurray;-)

Hey Talloola

If you were to put peanut butter in the meatballs and corn syrup in the Spaghetti sauce maybe he will get the idea that he could do as well......But
I think maybe he's had the good life too long to change. On the other hand, if you married the guy he must have more than a few good points to make up for his failings in the kitchen....;-):lol:

Yeah, that'll be the day, but you know, he has never ever criticized anything I
have ever cooked, he is so happy about everything, and if there was no food
cooked, he would just say, 'let's go out for dinner', and it's, 'wherever I want
to go'.
(well, I shouldn't ever say 'never',) I remember a pie I baked when I was about
16, chocolate pie, with whipping cream on top, but when we cut it, it almost
flew across the room, the pastry was so brittle, he teased me about that pie for years.;-) The chocolate
was good though.

don't think I'm that great, but he seems to.:-?
peanut butter in the meatballs, even my dog wouldn't eat that, (nevermind,
yes he would,) he's a lab, he loves cat poop, and anything rotton he can find,
but I watch him like a hawk so he doesn't get that chance.

I have been invited to a 'recipe' bridal shower. Supposed to bring our favourite recipe. However, the small print says,"keep in mind the bride is a vegtarian"... My favourite recipe is not a vegie recipe. Anyone have any favourite vegetarian recipes to share?

I'm not so sure it's the vanilla you need worry about.
I'm pretty sure it is. There's something in vanilla extract (alcohol maybe?) that kills the reaction you want from the baking powder to get light fluffy pancakes. Put it in too soon and you'll get thin, chewy little things more like crepes. Nothing wrong with crepes of course, unless they're not what you wanted. :smile:

I just made pancakes! Darn it! They were damn good too! Darn it!

You may as well go all the way. May I suggest a few rashers of bacon or a few good quality breakfast sausages. Fresh sliced peaches would be good too....;-):lol:

excellent, I just bought some peaches yesterday, warmed them up this morning,
peeled, and sliced, mixed with a little maple syrup and blue berries, and put
them on top of mashed banana, which was on top of our porridge, then granola
on top of everything.
the remainder of the peaches will go on top of pancakes, along with more
blueberries and maple syrup, I am drooling as we speak.
I'm off now, to the store for bacon, no sausages, there is a limit juan.;-)
