This simple recipe inspired me-had some of the ingredients to hand and the others were easily available.
One pineapple, peeled and diced,
two mangoes, peeled, and diced,
two cups of white vinegar,
a cup of raw sugar (or refined if you prefer)
and a couple habaneros for heat.
Simmer the fruits in the vinegar for about twenty or thirty minutes, add the sugar, and the peppers, and let it simmer for another 15-20 minutes before throwing it in a blender.
I used Habaneros and Cayenne (from the mountainous Interior of the province) Habanero for burn & bite and Cayenne for the sting.
Witches brew
Ready to blend
Successfully blended-had to be extremely careful since the blender was too full
Five 250ml jars & a bit
FWIW-I forgot that I started out to make a Mustard based Bajan style sauce based on that basic recipe that being said this an outstanding concoction just the right amount of heat the Best I've ever made.
