Never had it. Mostly egg is it not?

I bought an indoor grill this weekend (not a George Foreman). Grilled up some nice thick fresh tuna. A little slow to heat up. Not sure if it is more energy efficient than a stove top.

1 package (10 ounce) frozen chopped spinach (Ive used finely chopped broccolli also)

3/4 cup liquid egg substitute

3/4 cup shredded reduced fat cheese

1/4 cup diced green bell peppers

1/4 cup diced onions

3 drops hot pepper sauce

(at this point I use a quiche pan but this is their suggestion)

Microwave the spinach for 2 1/2 mins on high. Drain the excess liquid.

Line a 12 cup muffin pan with foil baking cups. Spray the cups with cooking spray.

Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well. Divide evenly among the muffin cups. Bake at 350 for 20 mins, until a knife comes out clean.

I read a study a while ago after my doc told me I had an elevated cholesterol level (probably from eating a few too many oily things that month). As a result I increased my intake of eggs from 1 a day to 4. My LDL cholesterol went down. Back to normal again.
F'n mainstream press demonized eggs. They get a hold of one study saying air is bad (however skewed the study may be) and spread it like jam on bread. Next thing you know, people are sucked in and air will kill you. I get iffy news like that and I research to find the actual facts in the matter instead of panicking and holding my breath.

I should correct myself. In the case of eggs it is the cholesterol level and the fat content. While not technically high in fat, the cholesterol level is very very high. I need to make choices. If I cut way way back on eggs, I can drink 1% milk and don't have to go to skim. If I cut out ALL junk food I can have a portion of meat that is larger than the palm of my hand.

Sites I have found put large eggs at 200mg of cholesterol. Goal should be under 300 for those with heart disease.

To be low fat a food must have less than 3 grams of fat per serving or less than 5% of daily recommended fat intake.

My taste in foods has expanded somewhat bit spinach has not made it on to the list yet. veggies so far are limited to carrots, peas, corn, brown beans and cauliflower. Leafy greens in salads with lots of sweet fruity vinegrettes is about all I can take. Still pretty much a meat and potatoes guy. Have upped fish recipes and added curried rice with raisins to mix. I try to avoid cheese if I can. I got a low fat cook book and it has no cheese recipes in it.

I now own 10 cook books. From the bible of cooking, the Joy of Cooking, to the set of Company's Coming books with their Low Fat Recipes book the last one I bought. I got books on meat and poultry, fish and seafood, and grilling. I should probably be the one giving out recipes.
