Thanksgiving is this Monday. It’s always observed on the second Monday in October. Canadians give thanks for a successful harvest, while the U.S. tradition remembers Pilgrims who settled in the United States.
Most Thanksgiving meals have three things in common: turkey, stuffing and mashed potatoes. However there are lots of ways to cook that turkey to achieve the tastiest and most tender bird.

MMMmmmm.... my fave thing about Thanksgiving is the leftovers.

Take your fave squash, and fry it up in a pot with butter and herbs to your liking. Once it's a bit caramelized, add chicken stock, or turkey stock if you took the time to make it, and simmer. Run through the blender to make a super creamy soup.

Meanwhile, take your leftover stuffing (or make some stovetop stuffing if you're like us and have no leftovers), and toast it slightly, put in a bowl and set aside.

Soak cranberries in warm water, put in a bowl and set aside.

Chop up apples, bowl, set aside.

Chop up left over turkey... same thing.

Caramelize some onions... same thing.

Any other leftovers that tickle your fancy, place in bowls and set aside.

Then, dish up your squash soup and let people top as they please with fruits, turkey, stuffing, whatever they feel like.

Make lots because it's a huge hit.

Thanksgiving:

Take one large family.
Add in 17 children.
Blend with 6 disfunctional in-laws.
Mix with 3 grandparents, gently kneaded with alzheimers.
Stir, adding copious amounts of television and alcohol.
Allow to steam in close quarters.
