I regularly do my family's produce shopping at a large clearance centre called H&W. produce there is significantly less money for the same quality I find in most local stores. As well as purchasing the usual grocery list, I try to add new and previously untried foods to our diet as they strike my fancy. Well, both price and appearance struck my interest yesterday when I spotted jicama. I bought it, brought it home, and started researching. What a wonderful addition to our diet!
Jicama is a sweet, crunchy root that feels somewhat like ya pear, and tastes somewhere between sweet potatoe and apple. I took the advice of a site I found and made a mexican inspired salad out of it last night which the family devoured despite the overly exuberant use of chilis (oops!)
shredded jicama (diced or julienned work too... go with what you like)
corn kernels (thawed from frozen kernels)
chives or green onions
red peppers
dress with...
olive oil
lime juice
chili powder
I eyeballed and tasted my way to the salad I wanted, so I apologize for the lack of defined amounts. I then served it over a bed of chopped romaine, with sliced chicken breast on top. Ranch dressing helped make it a bit richer and cut the heat for those in the family who aren't on diets, and it blends well with the chili and lime flavours in my opinion.
