Hot Legs/wing - #Juan some advice please

Juan - I and my son in law like hot foods - I usually boil chicken legs and wings for a bit then make up a sauce - let the legs/wing cool - then place sauce and legs in freezer bags and let marinate for a day - when I have time -

I plan on using this recipe but adding hot peppers in cheese cloth so they can be removed - and a second sauce for my wife and daughter as the dislike hot legs/wings.

Recipe is as follows and so I am looking for some tips please.
¼ tsp salt and pepper
¼ tsp paprika
¼ tsp garlic –fresh is better or minced
¼ tsp cinnamon
½ cup applesauce
½ cup brown sugar –or honey- better but more expensive
¼ cup ketchup
3 tbsp lemon juice
3 lbs pork ribs
You can also add a variety of other spices as it all depends on your taste. Some spices that you can add are, sesame seed oil, dry or wet mustard, ginger, if you like it hot sprinkle with some cayenne pepper when cooking.

The best BBQ spices I have found are under the brand name Cajun, carried by Safeway – Blackened Seasoning, Salt/ Pepper and 1 other - and are quite tasty.

I switched to the Keg spices – less salt.

1 – Mix all ingredients and cook on stove at low temperature and stir until well mixed.
2 – Boil ribs and let cool
3 – Marinate ribs in sauce overnight –in fridge
4 – In oven at 350 for 1 ½ hrs but is better on BBQ
Have extra sauce for BBQ or oven. Never reuse marinade.
This sauce is great for chicken.

I like jerk flavour wings.

Here the the sauce I use:
  • 1/2 cup ground allspice berries
  • 1/2+ cup packed brown sugar
  • 6 to 8 garlic cloves
  • 4 to 6 Scotch bonnet peppers
  • 1 tablespoon ground thyme or 2 tablespoons thyme leaves
  • 2 bunches escallions (green onions)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 tablespoons soy sauce
Blend the ingredients to liquify.
I boil the wings for a short time, let the wings soak in the sauce for an hour or two and then bbq in a basket, turning over frequently, drizzling the sauce on them as they cook.


They come out excellent.

I was thinking of the same type of pepper - they are warm - I will use this on the legs. As i told him they will be hot - I will have a beer - he can have the fire extinguisher - he rarely ever touches a drink. So beer is out for him that is.

Thanks for the recipe. I have a copy saved. - Have you ever tried different mustards in your sauces?

One thing that caught my eye was the scale of that recipe. If you are serving four people three pounds
of pork ribs and have roughly a cup and a half of sauce and to this sauce you are adding a 1/4 teaspoon of paprika,
salt and pepper, cinnamon, and garlic. Each person gets a quarter of a quarter teaspoon of each spice which sounds a little light but I realize you are going to add some heat to the sauce for those who like it hot. It should work. Good luck.
