I don't see much point in it either, except that fisherman can make a lot of money in a short time. Or they used to. Not sure how well it is going now.

Tulibee (freshwater herring) is now competing with ocean herring for the caviar market.

Fat is why they smoke well. Smoked salmon is utter garbage compared to smoked lake trout. It's because of the fat.

Depends on the salmon sockeye and pink both have high fat content . Vancouver Island sockeye are not as fatty and dry easily .
