Casseroles can be everything from a great way to cook veggies to a virtual one dish meal.

The following falls into the one dish meal category:

Potato Sausage Casserole

Ingredients
three cups frozen hash brown potatoes
one pound breakfast sausage
five eggs
one and a half cups milk
one large red bell pepper diced
four green onions finely chopped
one medium carrot shredded
one half teaspoon salt
one teaspoon black pepper(or to taste)
one teaspoon powdered mustard
one and a half cups shredded sharp cheddar cheese

Directions
simmer sausage in water, in covered pan, for 15 minutes. Drain, and brown sausage in a bit of vegetable oil. remove from pan and cool. Slice sausage into quarter inch slices and place in large mixing bowl.

Combine all remaining ingredients and add to sausage and mix well.

Pour mixture into eight by ten inch casserole dish and refrigerate overnight.

Let casserole sit outside fridge for one hour and bake for one hour at 350 degrees

rest for ten minutes and serve.

Great for Sunday Brunch.
