yup....but there's no way I'm handing out my wifes secret recipe for her potato salad....lol

Just take your standard potato salad recipe--you know, boiled potatoes, boiled eggs, dill pickles, green onions, chives, mayonnaise, radishes, whatever you usually do--and add a couple of tablespoons of mustard to the mix, just enough to give it a faintly yellowish cast. That little bit of piquancy takes it to the next level.

Here is a recipe that I've used for years:

Ingredients

4 large potatoes..peeled and boiled till tender
1 medium onion finely chopped
6 eggs boiled right along with the potatoes(boil with the potatoes for about ten minutes
3 green onions finely chopped
1/2 of a cup mayonaise
11/2 tablespoon Djon mustard
1 tablespoon catchup
1 teaspoon sugar
Tablespoon chopped parsely

Directions

dice cooked potatoes into serving bowl
Peel and coarsely slice boiled eggs and add to your potatoes
Add the rest of the ingredients
Mix well. salt and pepper to taste
Use a soft spatula to smooth the top of your salad and to clean
the sides of the bowl.
Garnish with fresh parsely and a few shakes of paprika

Chill for a couple hours and serve.

PS....The original recipe called for a medium sized dill cuke to be finely chopped into the salad but the kids hated it so I dropped it and added a bit of catchup to keep the moisture content mostly the same.

Risus, I like to add dill popcorn seasoning (or dill dip mix, same thing) to a typical potatoe salad. It gives it a dilly zip.

2 pounds red potatoes
1 celery stalk
2 tbsp chopped fresh chives or 1/4 red onion minced
3/4 cup real mayo
2 tbsp red wine vinegar
6 hard boiled eggs peeled and sliced
salt and pepper to taste

Boil potatoes in salted water whole until tender (don't over cook).

Drain, peel (I don't peel them), and cut into bite sized pieces.

In a bowl toss still warm potatoes with celery, onions and eggs

Stir together mayo and red wine vinegar then toss with warm potato mixture (the potatoes must still be warm so it absorbs the mayo and vinegar mix).

Add salt and pepper to taste.

Chill or serve right away.

You can also add crumbled bacon, mint, pickle relish, pimentos or black olives.

I've never used a recipe for potato salad! I just make it.

Boiled peeled potatoes. (as many as you need for the number of people you're feeding). Boiled eggs. Green Onions. Grated carrot. Two stalks celery finely diced. Too many ingredients simply ruin the taste!
Dressing: Miracle Whip, English salad cream dressing, prepared mustard, yellow hot dog relish and a tiny bit of vinegar to loosen up the thickness of the dressing. Grate the eggs so they are well distributed. Add only about 1 tsp of mustard and a heaping tbsp. of relish to the miracle whip. I use about a half cup of English salad cream added to whatever amount of Miracle Whip I'm using.
The relish gives it a little tang, the vinegar and the English salad cream dressing loosen up the thickness of the Miracle Whip and give a nice flavour. The mustard and the relish together give the salad a slightly yellow appearance giving people the thought that it is loaded with eggs. For a salad that feeds about 6 - 8 people, I use only about 4 eggs.

Good recipes above. But my secret ingredient is bacon chopped up and put on top of the salad.

Yummmmmm!!!!

I'm same as Van Isle, never measure anything, but I cook
lots of eggs, about a dozen, love the salad loaded with
eggs, just cut up nicely in little chunks.

Mayonnaise, mixed with a little coffee cream to thin it
out a little, (or milk).

No mustard for me.

Green onions, and a few regular onions chopped small, if
desired.

Of course boiled, and cooled potatoes sliced in chunks,
not too small.

Lots of pepper, and a bit of salt. The salad is very moist,
with all the eggs.

I don`t know if this qualifies as a recipe per se, but I do what my mom did; put a tablespoon or two of Zesty Italian Dressing on the potatoes after boiling, stir and mix well, then put in the fridge. The flavouring gets absorbed into the potatoes (gives it a nice zing), and I add the mayo just before serving.

Did i miss it or does nobody put peas in their salad? I wonder where that came from,putting peas in potato salad
