Pork Tenderloin to die for

This week end Save-on had pork tender loins on for two dollars a pound. If you managed to get any, here is a great recipe
to cook them.

First, remove any membranes from four of the tenderloins if there is any.

Second, throw a good, generous handful of dried oregano ont your countertop and roll the tenderloins in the oregano until
they are well coated. Next brown the tenderloins in half a cup melted butter on all sidesand place in shallow baking dish.

Next add about a dozen tiny onions among the tenderloins along with a half dozen mediun carrots.

Nexy, add two tablespoons of flour to the remaining melted butter.

whisk the flour and butter into a smooth roux and add a cup and a half to two cups of chicken stock.

Pour the resulting gravy over all

Place in 350 degree oven for 50 minutes

When cooking is over cut tenderloin and carrots into two inch pieces. Skewer alternately, pork onions, and carrots and arrange on
serving dish. Pour over any remaing gravy,.

Some little tiny nugget potatoes would go very well with this dish.
