Very good Quandary. I've done paella a few times and your recipe is very similar to what I use except I use tumeric rather than food colour. I've chopped up a whole chicken but prefer to go with chicken wings or thighs to avoid the little splinters of bone that I sometimes make with my cleaver. Piella is a great company dish with something for everyone.
