So, while hubby and were away in Newfoundland, thanks to the convenience of the company rental car, we were able to head out to Ferryland for a lighthouse picnic. While weather didn't really cooperate, the food they serve at the lighthouse was still fantastic. We had smoked salmon, shrimp, and avocado sandwiches that were, simply, to die for.
Today I've recreated the closest thing I have at hand.... yesterday's leftover baked salmon and a smear of avocado, toasted to perfection.
