Chopping up a quote

I've noticed many responses where a quote has been divided up to give a more cogent response. How do you divide up a quote, I ain't got the foggiest?

One way is to hit the quote button then remove the original quote tags in the reply. Then hilite the part you want to pick out and click
. Write a reply to it, then hilite the next text and do the same etc.

And here I've been copy and pasting the quote tags instead.

For example

I've always been in love with Kermit the Frog

So long as the bits inside of brackets are at the front and back, I just copy and paste them into where I want a quote divided up.
