Eggnog cheesecake lets you enjoy two holiday treats in one

Eggnog Cheesecake
It wouldn’t be Christmas without eggnog. In this delicious version, courtesy of Vitamix, you combine two favourite holiday treats in one – a smooth creamy cheesecake with that familiar, delicious flavour!

1 cup (125mL) graham crackers, crumbled
2 Tbsp. (30mL) granulated sugar, for crust
3 Tbsp. (45mL) butter, softened
24 oz. (680g) cream cheese
1 cup (250mL) granulated sugar
3 Tbsp. (45mL) all-purpose flour
3/4 cup (175mL) eggnog
2 large eggs
1 oz. (30mL) rum
1/2 tsp. (2mL) ground nutmeg
Preheat oven to 350F (180C). Combine graham cracker crumbs, sugar, and butter in a bowl and press into the bottom of a 9-inch (23 cm) spring form pan. Bake for 10-15 minutes until light gold. Let cool.
Beat cream cheese, sugar, flour, eggnog, eggs, rum and nutmeg until smooth. Pour mixture into pre-baked crust and bake an additional 45-50 minutes, or until cake is barely firm to touch. Remove from oven and loosen cake rim. Cool cake completely and remove ring. Cover lightly and refrigerate until completely chilled before serving.
Serves 10.
