How to make a Thai shrimp pizza

Nutritionist Rose Reisman shows you how to make a delicious and healthy Thai pizza with shrimp and peanut sauce.

Thai Pizza with Shrimp and Peanut Sauce
Makes 8 servings.
Dressing (you can always use store bought peanut sauce as well)
3 Tbsp light coconut milk
3 Tbsp peanut butter
4 tsp hoisin sauce
2 tsp low-sodium soy sauce
2 tsp rice vinegar
2 tsp sesame oil
1 tsp honey
1 tsp crushed garlic
1 tsp crushed ginger
1 ½ tsp (minced jalapeno peppers)
Pizza
one 12-inch pre-baked thin pizza crust (preferably whole wheat)
1 cup grated part-skim mozzarella cheese (3 oz/90 g)
1 cup sliced sugar snap peas
1 cup sliced red peppers
¾ cup diced raw shrimp or cooked chicken
3 Tbsp chopped cashews
1/3 cup diced green onions
¼ cup cilantro
1. To make the dressing In a small food processor, purée the coconut milk, peanut butter, hoisin and soy sauces, vinegar, sesame oil, honey, garlic, ginger and jalapeños.
2. To assemble the pizza Drizzle three-quarters of the dressing over the pizza crust. Save the rest for garnish.
3. Add the mozzarella, snap peas, red peppers, shrimp or chicken, and cashews overtop. Bake at 400°F for 12 minutes or until the crust is crisp.
4. Pour the remaining dressing overtop. Garnish with green onions and cilantro.
Preparation time 20 minutes
Baking time 12 minutes
Make ahead Prepare the pizza up to a day before. Bake just before serving.
Rose’s tip
Try different nut butters, such as almond or cashew. Soy butter is great for those with nut allergies.
Health tip
A small thin pizza crust alone has half the calories of a small deep dish or thick pizza crust.
