How to tell the difference between Japanese and Chinese people

I think we've all done the famous rhyme as kids:

"Chinese (at the same time push the edges of your eyes up to make upwards-slanting slitty eyes)
Japanese (at the same time push the edges of your eyes down to make downwards-slanting slitty eyes)
Don't forget to wash your knees."

It's a great way to remember how to tell the difference.

I can understand the Chinese but not the Japanese. That's how I tell them apart even over the phone or radio.
