Placement of pies in oven is critical. Too high top burns bottom is mushy. Too low bottom overdone and top not browned. Try different racks and positions in oven when baking pies.

Here's something from Betty Crocker's book that has just now been re-released:

For well-baked, browned undercrust, choose pie pans of glass or enamelware. Shiny metal does not bake the undercrust as well because it deflects the heat.

NOW I KNOW!

*must...not...commment on above post* haha

I eat out at a restaurant about once a week, usually on the weekend. I love cooking at home, but restaurants are fun and i like the adventure of trying something new...without having to screw it up at home, haha. Also, just because you eat somewhere besides home, doesn't make it unhealthy! =) I'm lucky to live in Vancouver, the land of many restaurants (and not all chains!). I used to live in Abbotsford and it's full of chain restaurants. When i was living there, my boyfriend at the time asked me what my favourite places to eat were. I answered with places like White Spot and IHOP. After living here for a year, he asked me that same question again, and now it's full of all sorts of different little restaurants and pubs around Vancouver. If i'm going to go out to eat, it's going to be somewhere good!

Well...i still love IHOP...i mean c'mon...it's IHOP!!! =)

Yeah, I like IHOP or Denny's myself when I want to eat a huge breakfast. IHOP has the best swedish pancakes...

Enamelwear is okay, but glass does not brown your bottoms. I have been baking for along time and it is not the first time that I have found Betty's advise to be taken with a grain of salt. She is not always right. I find that for the best pies really are done in a tin foil pie plate. Really good flaky crust, and nice golden color. Glasswear tends to undercook your crust. Just because she has a book or two does not make her the queen of the kitchen.

AKA McPancake.

I've only been to two in the states and found they were inferior to Denny's which is not really good unless you are trying to pack on the pounds. Barf!

When I was a young boy I lived in a small town and maybe once a month my parents would go into the big city (Prince George?) and we would usually have brunch at the IHOP. At seven or eight years old I thought it was magic. They seemed to have at least a hundred choices of different pancakes to have. I tried to pick something different every time and after a while I decided that there weren't that many different pancakes, but many different ways of presenting them; eg with strawberries, blueberries, etc. etc....Like most things, the magic wore off.

I use foil pie and cake pans. Don't bake much so cost is not a factor. Plus if I get it wrong I can destroy foil to get product out or toss whole nine yards.

A friend of mine, (with a bit of a short temper) was attempting to make some sort of
pancake one day, something wasn't going quite right in the pan, so she yanked it out,
hurled it across the room, which caused it to stick flat against the wall, then it slowly
slid down the wall in behind some cabinet, and stayed there for months.

Ach, way too much smut in this thread. I like eating out, so does my lovely wife, however you understand the phrase. It's all good, but some versions of it cost less than others. Given a choice between going out for dinner and oral sex... well, I've never been so hungry that the former is more appealing than the latter.

You could add whipping cream, then you would have the best of both worlds.
